Blueberries and Walnuts (Serves 1)
No eggs in the house. What can we eat for breakfast? I’ve got a cup of blueberries and a package of walnut pieces. Let’s try them together… In looking for a fancy name for this tasty feast, I did a Google search on “Blueberries and Walnuts.” The first title that came up was “Diet Of Walnuts, Blueberries Improve Cognition; May Help Maintain Brain Function” from ScienceDaily (Nov. 7, 2007) – http://www.sciencedaily.com/releases/2007/11/071106122843.htm. How cool is that? I stumbled upon super foods without trying.
Prep and Cook Time: 1 minute
Ingredient list:
One cup blueberries (thawed from frozen or fresh)
Two handfuls of walnut pieces
Directions:
Dump blueberries in a bowl. Dump walnuts on top. Eat.

May I recommend a splash of coconut cream or milk… That would make this even more epic!!
I eat this same mixture with about 1/4 cup of coconut milk. Pecans are also good…
Coconut milk sounds like a great addition!
