Chorizo Sausage with Brussels Sprouts, Mushrooms, and Onions (Serves 3-4)
Many sausages include sugar to counter the effect of hot spices, but not chorizo, at least not the varieties I have found. The hot, smoky flavor of chorizo sausage is strong and does well paired with Brussels sprouts to make a tasty and simple meal. I originally made this meal with just chorizo and Brussels sprouts, but now include onions and mushrooms.
Prep and Cook Time: 25 minutes
Ingredients:
1 pound of chorizo sausage
1 pound of Brussels sprouts
8 ounces of mushrooms
1 medium sweet yellow onion
Extra virgin olive oil
Garlic powder
Black pepper
Salt
Directions:
Chop onion and mushrooms into bite-sized pieces. Rinse Brussels sprouts. Cut away surplus stems, discard loose leaves, and cut heads into halves. Cut sausage into bite-sized pieces. Add two tablespoons of olive oil to a sauté pan or wok over medium heat. Add onion and let cook for a few minutes. Add sausage. Stir and break into smaller pieces with a spatula. Add Brussels sprouts and mushrooms. Cover and let cook for 10-15 minutes or until Brussels sprouts are tender, stirring once or twice. Transfer to a plate and eat!

i just finished making my version. so yummy! instead of using chorizo, i used homemade portuguese sausage called chorica. gives a great flavor. reminds me of food my mom used to make when we were little. i also added some red peppers in.
just delicious.
