Green Breakfast Smoothie (Serves 1)

My wife gave me a Vitamix blender for Christmas that has inspired me to explore the world of smoothies. I am drinking at least one per day now, mostly as part of my breakfast. I don’t know how to create a smoothie without using a powerful blender or food processor, so, unfortunately, this recipe requires specialized equipment that you might not have in your kitchen. Sorry.

Prep Time: 5 minutes or less

Ingredients:

1 banana
1 handful of baby carrots
1 handful of celery sticks (about 2.5 inches long)
1 big handful of fresh spinach
3-4 ice cubes

Directions:

Dump ingredients into blender in the order listed. I usually add a splash of water to thin my smoothie just a bit. Secure top on blender. Start blending at low speed and move up to high speed quickly, using a tamping tool to facilitate blending as needed. Continue about one minute or as needed to achieve a smooth consistency. Pour in a glass and drink.

I like to eat one boiled egg while I drink my smoothie. You could blend a boiled egg into the smoothie, but I prefer keeping them separate.

Notes: A boiled egg makes an excellent snack and I like them cold, so keep some in my refrigerator almost all the time. To prepare I place eggs in cold water in a pan, bring water to a hard boil, turn off heat, and let eggs sit in hot water for about 20 minutes. Then transfer eggs to a container and let them wait in the refrigerator until needed.

Whenever I buy celery, I clean it and cut it into lengths of about 2.5 inches and put it into an air tight container in the refrigerator until needed. The same with baby carrots (only they don’t need cutting).

I buy one bag of pre-washed fresh spinach at a time and find that it will keep in the refrigerator for almost a week. However, since I started adding spinach to smoothies almost every day, one bag no longer lasts me a week.

  1. Letting the eggs sit 20 minutes is a bit on the long side. 10 minutes with the lid on should be enough.

      The Vitamix is a premium quality blender that costs a lot, but is nearly indestructible and can leap tall buildings in a single bound.

  8. Could you put hemp seeds or flax seeds in this? Are those Whole30 approved?

      Q: Why can’t I get my omega-3′s from flax?

      A: There are countless problems with getting your omega-3′s from this particular plant source. It requires an extremely inefficient conversion process – meaning your body has to do a lot of work to get the EPA and DHA you want out of the kind of fat found in flax (ALA). And the conversion pathway is fraught with difficulties that can, in fact, lead to MORE inflammation – the exact opposite of the intention. Finally, even if everything works perfectly, the amount of EPA and DHA you can actually convert from flax is so small it practically doesn’t count. (By the way, the story is the same whether you’re talking about flax, chia, hemp or echium.) Just stick with your fish oil.
