Shrimp and Cabbage Stir Fry (Serves 1)
Going to the grocery store hungry is a dangerous thing, especially when you need just a few things. Too often you leave the store with a cart load of groceries because everything looks good on an empty stomach. I prepared a quick and simple shrimp and cabbage stir fry to prepare me for shopping the other day and it turned out to be a surprisingly good meal. Pre-cooked frozen shrimp can be thawed in minutes under running water and chopping enough cabbage for a meal takes just a few minutes. Mix everything together with salt, garlic powder, and black pepper in hot oil and you’re ready to go. Try it some time!
Prep Time and Cook Time: 15 minutes
20 or so frozen, cooked shrimp
1/4 to 1/3 head of green cabbage
Directions: Place about 20 frozen shrimp under running water in the sink to defrost quickly. Chop cabbage into bite-sized strips. Melt one or two tablespoons of coconut oil in a wok over medium heat. Add cabbage and stir until coated with hot oil. Season with salt, garlic powder, and black pepper to taste. I like a nice dusting of each. Stir occasionally for about 5 minutes until cabbage is soft and then add shrimp. Add garlic powder and black pepper to taste on the shrimp. Cover and let shrimp heat through with the cabbage for several minutes. Transfer everything to a plate and enjoy!
