Great Green Smoothie (Serves 1-2)
Smoothies are my favorite way to eat spinach, so I make them at least 3 or 4 times per week. My earliest smoothies included just one handful of spinach, but I have worked my way up to two big handfuls more recently. My smoothies taste as good as ever, but now I am getting twice as much super food in each glass.
Prep Time: 5 minutes or less
Favorite Ingredients:
1 banana
1 handful of blueberries
1 handful of baby-cut carrots
2 big handfuls of fresh spinach
1 orange, sectioned
Optional ingredients:
1 handful of celery sticks (about 2.5 inches long)
1 avocado, (scooped out of the skin)
Directions:
Dump ingredients into blender in the order listed. Secure top on blender. Start blending at low speed and move up to high speed quickly, using a tamping tool to facilitate blending as needed. Continue about one minute or as needed to achieve a smooth consistency. Pour in a glass and drink.
Notes: A smoothie needs something creamy in the blend like a banana or an avocado. I prefer the sweetness of banana, but like avocado-based smoothies too. I keep blueberries in my house specifically for smoothies. I think blueberries and spinach go wonderfully together. I always add an orange because a smoothie needs some acid.
I clean celery and cut it into lengths of about 2.5 inches and put it into an air tight container in the refrigerator until needed. The same with baby carrots (only they don’t need cutting). I always add carrots to my smoothies and add celery whenever it is available.
I buy one bag of pre-washed fresh spinach at a time and find that it will keep in the refrigerator for almost a week. However, since I started making smoothies, one bag no longer lasts me a week.
