Pulled Pork with Butternut Squash and Onions – Slow Cooker Style (Serves 7-8)

I don’t use my new slow cooker every day. I’m cooking such big pieces of meat that it takes 3 or 4 days to finish the leftovers when it is just my wife and I at home. The latest slow cooker adventure has been pork slow cooked for nine hours with butternut squash and onions. I can’t cram enough vegetables in the slow cooker to last as long as the pulled pork, but it is easy to stir-fry more vegetables to eat with leftover pork until it is gone.

Cook time: 9 hours

Ingredient list:

4.5 pound Boston Butt pork roast
2-3 sweet yellow onions
1 butternut squash
2-3 cups of chicken broth
Coconut oil
Ground cumin
Ground coriander
Red chili powder
Garlic powder
Celery salt
Salt

Directions: Peel butternut squash and onions and chop into bite-sized pieces. Prepare a spice rub with the cumin, coriander, red chili powder, garlic powder, celery salt, and plain salt. Season roast generously on all sides and lay in the slow cooker. Arrange squash and onions around the roast. Pour in 2-3 cups of chicken broth as required to submerge half or more of the roast. Place cover on slow cooker. Set temperature to slow cook (200 degrees on my unit) and time to 9 hours. That’s it! The house smells great after a few hours and continues to smell great until after you pack the leftovers away in the refrigerator.

Notes: I noticed that my chicken broth was bubbling after about 4 hours, so lowered the temperature to simmer (185 degrees on my unit). The meat might have been ready earlier, but I let it go the entire 9 hours to give it an opportunity to become really tender.

My slow cooker is a Cuisinart Multi Cooker that I picked up at Williams-Sonoma because my local store had one in stock and I wanted to start cooking right away. Amazon was selling the Cuisinart, but has apparently stopped. The Breville Stainless-Steel 7-Quart Slow Cooker with EasySear Insert on display in my Store is similar. Check it out by clicking on the Store link in the upper right hand corner of this site. The Cuisinart has a see-through top and the Breville has a stainless steel top. I like being able to see inside without opening the lid, but the Breville sells for $75 less than the Cuisinart.
