Shrimp with Broccoli, Onions, and Golden Raisins (Serves 1)

I keep frozen shrimp at my house in case I run out of anything fresh to eat. I can’t remember the last time I ran out of fresh food and there is a Natural Foods Warehouse within walking distance of my house, but I am prepared regardless. This meal was inspired by an emergency of sorts, however. I was planning to buy grass fed beef in bulk at the Alpharetta Farmer’s Market and needed to clear extra space for it in the freezer. After this meal, I only have one bag of shrimp in the freezer.

Prep Time and Cook Time: 15 minutes

Ingredient list:

20 or so frozen, cooked shrimp
1 stalk of broccoli
1 sweet yellow onion
Golden raisins
Coconut oil
Garlic powder
Black pepper
Salt

Directions: Place about 20 frozen shrimp under running water in the sink to defrost quickly. Chop onion into bite-sized pieces. Melt one or two tablespoons of coconut oil in a wok over medium heat. Add onions and cook until soft, stirring occasionally. Cut broccoli florets from stalk. Add broccoli to wok and stir until coated with hot oil. Season with salt, garlic powder, and black pepper to taste. I like a nice dusting of each. Add a splash of water, cover the wok, and let cook for about 5 minutes. Add shrimp and a handful of golden raisins. Add garlic powder and black pepper to taste on the shrimp. Add another splash of water if needed, cover the wok, and let cook for another 5-10 minutes until the broccoli is as tender as you like it. Transfer everything to a plate and enjoy!
