Broccoli Florets with Leftover Ground Turkey (Serves 1)
My favorite approach to broccoli is stir frying the florets in coconut oil with a little sweet yellow onion. Five to eight minutes in the hot seat are enough to bring out the best of broccoli’s taste and texture. I like to pair freshly stir-fried broccoli with leftover chili or leftover Ground Turkey with Mushrooms, Onions, and Spinach. The pair makes a really nice meal in 15 minutes.
Prep and cook time: 10-15 minutes
1 stalk of broccoli
1 small sweet yellow onion
Leftover Ground Turkey with Mushrooms, Onions, and Spinach or chili
Directions: Melt 1 or 2 tablespoons of coconut oil over medium heat in a wok. Peel onion and chop into half moon slices. Add onion to hot oil and cook for 3 to 4 minutes, stirring occasionally. Cut broccoli florets from the stalk and save the stalk to make broccoli puree later. Add the florets to the hot oil with the onions and cook for 5 to 8 minutes, stirring occasionally. Season with a nice dusting of salt and garlic powder. After the broccoli has been cooking for 3 to 4 minutes, add leftover Ground Turkey or chili and let everything cook and heat together until steaming hot. You might need to add a little water to the wok if things get too dry. When ready, transfer to a bowl and enjoy!
