Ground Turkey with Mushrooms, Onions, and Spinach (Serves 4-6)

I watched Claire Robinson make “Turkey Robinson” with ground turkey, spinach, and cannellini beans on 5 Ingredient Fix recently and decided to make my own version. “Turkey Denham” if you please, is made with ground turkey, spinach, mushrooms, onions, and habanero pepper. The result is a lot like chili, and like chili, can be eaten alone or over a vegetable dish.

I’ve cooked with habanero peppers a lot recently because habaneros have been available from my friends at Cherith Farms and I am increasingly learning to cook what is in season. Habaneros are among the hottest peppers and I am not a “heat seeker,” but good is good and I am glad I am learning to cook with them.

Prep and cook time: 25-30 minutes

Ingredients:

1 to 1.5 pounds of ground turkey
1 medium sweet yellow onion
12 ounces of mushrooms – sliced
9 ounces of fresh spinach
1 habanero pepper – seeded and minced
Beef tallow or coconut oil
Unsweetened cocoa
Red chili powder
Garlic powder
Paprika
Nutmeg
Salt

Directions: Melt 1 or 2 tablespoons of beef tallow or coconut oil over medium heat in a wok. Peel onion and chop into half moon slices. Add onion to hot oil and cook for 3 to 4 minutes, stirring occasionally. Add ground turkey and, using a wooden spatula, break up the clumps and cook 5 to 7 minutes until brown. Season with a teaspoon of garlic powder, a teaspoon of red chili powder, a teaspoon of paprika, a teaspoon of nutmeg, a tablespoon of salt, and 2 to 3 tablespoons of unsweetened cocoa powder. Stir in seeded and minced habanero. Add fresh spinach and stir into the hot ground turkey mix so that it wilts. Add mushrooms and stir everything together well. Cover and let cook for 5 minutes until everything is hot. Transfer to a bowl and enjoy!

Notes: I used 1.29 pounds of ground turkey because that was the size of the package I bought. I used 9 ounces of fresh spinach and 12 ounces of sliced mushrooms because that was the size of the packages I bought. Cooking with whole packages and cans has been working for me, so most of my recipes call for going all in with ingredients.
