Shredded Beef with Broccoli Puree (Serves 2)
The hardest part of preparing beef in a slow cooker is starting 7 to 10 hours before you want to eat. Everything else is quick and easy. And after the beef is done, meal preparation becomes even faster and easier. I’ve published several slow cooker recipes for beef, the latest was Slow Cooker Cinnamon Chuck Roast and Onions. Make that one or something similar and then you can enjoy Shredded Beef with Broccoli Puree with just about 15 minutes more work.
Prep and cook time: 15 minutes
3 broccoli stalks
Directions: Bring a few cups of water to a boil in a sauce pan over medium heat. Add broccoli stalks to a steamer basket or colander over the boiling water, cover with a lid, and let steam for 10 minutes. Transfer the steamed broccoli to a food processor and puree the now tender stalks. Add salt, garlic powder, and black pepper to taste and run the food processor to blend in the spices. Be generous with the spices as it takes a lot to overwhelm the broccoli. To prep the beef, use two forks to shred enough meat for two servings. If the meat is cold from the refrigerator, microwave it for 60 to 90 seconds and then transfer it to plates. Add broccoli puree to each plate and enjoy!
