A Merry Christmas Scramble (Serves 2)

My wife and I got up at 9 AM to feed the dogs, dress, eat breakfast, exchange presents, and make it to church by 11 AM.  I added a short workout of Turkish getups, situps, pushups, and squats before getting dressed and did not have enough time to cook my typical baked egg breakfast, so made a quick scramble instead. I was almost finished when I realized that I had made a Merry Christmas Scramble with roasted red peppers and wilted greens. I will make this dish on purpose next year.

Prep and Cook Time: 10 minutes

Ingredient list:

4-6 fresh eggs
1 small sweet yellow onion
Clarified butter or ghee
1 jar of roasted red peppers
1 big handful of fresh greens
Red chili powder
Garlic powder
Turmeric
Salt

Directions: Chop onion into bite-size pieces. Melt 2 tablespoons of ghee in a large skillet over medium heat.  Add a handful of onion to the skillet and save the rest in an airtight container in the refrigerator. Remove 1 or 2 roasted red peppers from jar and cut them into bite-size pieces. Add roasted red pepper pieces to the skillet. Roll fresh greens into a fat cigar shape and then slice the cigar into 1/2-inch pieces. Add sliced greens to the skillet. Season vegetables with salt and garlic powder. Crack 4 to 6 eggs into a bowl and whisk until well mixed. Add salt, garlic powder, turmeric, and red chili powder to taste and whisk until well mixed. Pour the eggs over the vegetables in the skillet. Scrape the eggs off the bottom of the skillet continuously over the next few minutes until the mixture is as dry and well-set as you like. Transfer to plates. Merry Christmas!

Note: We made it to church with 8 minutes to spare!
