Avocado, Spinach, Orange, Cranberry, and Fig Smoothie (Serves 1-2)
When building a smoothie, you need something creamy. I had avocadoes. You need something acidic. I had oranges. I think you need something green. I had fresh spinach. You can add carrots, celery, a little onion, and all kinds of things, but I had cranberries and figs, so added them. My smoothie this morning really hit the spot. The figs I used came from a bucket load I picked months ago. I froze the ones I did not eat immediately and they have been waiting patiently for me. I have been using up everything in my freezer in anticipation of buying a quarter of a cow and finally came to the frozen figs. Despite the months of storage, they performed nicely in my smoothie. If you don’t have figs, you might substitute a small banana (fresh or frozen).
Prep Time: 5 minutes
Ingredients:
1 avocado (peeled)
2 big handfuls of fresh spinach
2 small oranges (peeled)
1 big handful of fresh (or frozen) cranberries
1 big handful of fresh (or frozen) figs
Directions:
Dump ingredients into blender in the order listed. Secure top on blender. Start blending at low speed and move up to high speed quickly, using a tamping tool to facilitate blending as needed. Continue about one minute or as needed to achieve a smooth consistency. Pour in a glass and drink.
Notes: A banana is a good substitute for the creamy component needed in a smoothie if you don’t have an avocado.
A bag of pre-washed fresh spinach will keep in the refrigerator for a week. However, I tend to wilt all the spinach in a bag for one meal (and I liked wilted spinach), so a bag usually doesn’t last long at my house.
