Quick Salmon Salad (Serves 1)
My local farmer grows arugula and I’ve been getting a bunch almost every Saturday for the past few weeks. The peppery flavor of arugula makes a wonderful base for a Quick Salmon Salad. How quick? 5 minutes. Easy? Yep. I should call it Quick and Easy Salmon Salad. Try it.
Prep and Cook Time: 5 minutes
1 small can of salmon (boneless and skinless)
1 bunch of fresh arugula
Extra virgin olive oil
Lemon juice (I keep a bottle in the refrigerator, but you could squeeze a lemon)
Directions: Arrange fresh arugula in a bowl or plate. Open a can of salmon and arrange it on top of the arugula. Add equal parts lemon juice and olive oil to a mixing bowl. The volume you add is the dressing for your salad, so pour accordingly. Add a dusting of salt, garlic powder, and black pepper to the bowl. Whisk or stir the ingredients together and then pour it over the salmon and arugula. That’s it. Eat!
