Chicken Apple Sausage with Artichoke Hearts, Red Onion, and Cashews (Serves 1)
I like canned artichoke hearts, keep them in my pantry, and sometimes heat them up with no additional seasonings or sauces and use them as a side dish. If my local farmer started growing artichokes, I would see what I could do with them, but currently am happy with the convenience and taste of canned.
Combining red onion, artichoke hearts, chicken sausage, and cashews yeilds a fresh tasting, attractive meal from largely staple items. Try it. As an added bonus, the prep time is only about 15 minutes.
Prep Time and Cook Time: 10-15 minutes
2 chicken apple sausages
1 can of artichoke hearts
1 small red onion
1 handful cashews (mine were roasted and salted)
Extra virgin olive oil
Directions: Add 2 tablespoons of olive oil to wok over medium heat. Peel and chop onion into bite-size pieces and add to hot oil. Season with a dusting of salt, garlic powder, and black pepper and let cook 3 to 4 minutes until soft. Open artichoke hearts and drain can of water. If needed, use a sharp knife to cut artichoke hearts into bite-size pieces and add to wok. Use kitchen shears to cut sausages into bite-size pieces and add to wok. Stir in with veggies. Add a handful of cashews. Stir everything together, cover, and let everything cook for 5 minutes until everything is hot. Taste and adjust seasonings if necessary. Transfer everything to a plate and enjoy.
