Chicken Apple Sausage with Arugula, Onions, Walnuts, and Dried Cranberries (Serves 1)
Pre-cooked often means lacking in taste, but not when it comes to chicken apple sausage from Applegate Organics or Aidell’s. I buy a pack every time I go to Whole Foods because they make a great foundation for a variety of quick, stir-fried meals. In this case, Chicken Apple Sausage with Arugula, Onions, Walnuts, and Dried Cranberries. By quick I mean 10 to 15 minutes from start to eating.
Prep Time and Cook Time: 10-15 minutes
Ingredient list:
2 chicken apple sausages
1 bunch of arugula
1 sweet yellow onion
Walnut pieces
Dried cranberries infused with apple juice
Extra virgin olive oil
Garlic powder
Black pepper
Salt
Directions: Add 2 tablespoons of olive oil to wok over medium heat. Chop onion into bite-size pieces and add to hot oil. Let cook 3 to 4 minutes, stirring occasionally until the onion begins to become soft. Use a pair of kitchen shears to cut arugula into bite-size pieces and add to wok. Stir in with onions until the arugula is shiny with oil. Season with a dusting of salt, garlic powder, and black pepper. Use kitchen shears to cut sausages into bite-size pieces and add to wok. Stir in with veggies. Add a handful of walnut pieces and a handful of dried cranberries. Stir everything together, cover, and let everything cook for 5 minutes. Taste a piece of the arugula and adjust seasonings if necessary. Transfer everything to a plate and enjoy.
