Chicken Apple Sausage with Cabbage, Beet Greens, and Walnuts (Serves 1)
Many times I have a little of this and a little of that in my refrigerator. The secret to being a good cook is knowing what goes well together. Failing that, you can experiment like I do. Mixing cabbage and beet greens works as I found by cooking my little of this and little of that with some chicken sausage. If it had not worked, you would never have heard about it from me.
Prep Time and Cook Time: 10-15 minutes
2 chicken apple sausages
1 big handful chopped cabbage
1 handful beet greens
1 handful walnut pieces
Raspberry balsamic vinegar
Extra virgin olive oil
Directions: Add 2 tablespoons of olive oil to wok over medium heat. Chop cabbage into bite-size pieces and add to hot oil. Tear beet greens into bite-size pieces and add to hot oil. Season with a dusting of salt, garlic powder, and black pepper. Splash the veggies with a little raspberry balsamic vinegar. Use kitchen shears to cut sausages into bite-size pieces and add to wok. Stir in with veggies. Add a handful of walnut pieces. Stir everything together, cover, and let everything cook for 10 minutes. Taste and adjust seasonings if necessary. Transfer everything to a plate and enjoy.
Note: I use the OXO Good Grips Spring-Loaded Poultry Shears. See them in my online Store.
