Slow Cooker Chicken Vindaloo

Slow Cooker Chicken Vindaloo (Serves 8)

The sweetness of onions and the spicy heat of chili peppers and ginger combine to make this a flavorful dish. I puree only a portion of the onions to make the Vindaloo sauce, so this is not a traditional recipe, but it is good.

Prep time: 30-45 minutes
Cook time: 7 hours

Ingredient list:

8 large yellow or red onions
6-10 chili peppers (mine were jalapenos, but you could use others)
1/3 cup apple cider vinegar
1 8-inch pieces of fresh ginger (peeled) or 4 tablespoons ground ginger
20 cloves garlic (peeled)
1 tablespoon turmeric
1 tablespoon ground coriander
1 tablespoon garam masala
1 teaspoon ground cinnamon
1 tablespoon black pepper
1 heaping teaspoon of salt
1 tablespoon mustard powder
4 pounds of chicken (boneless and skinless is best, but you can cut up a whole chicken)

Directions: Peel onions. Cut 3.5 onions into chunks and make into a puree in food processor. Remove seeds from chili peppers and add flesh to food processor. Add 1/3 cup of apple cider vinegar to food processor. Add 4 tablespoons of ground ginger. Add garlic cloves, turmeric, coriander, garam masala, cinnamon, black pepper, salt, and mustard powder. Run food processor to mix spices and chilies with onion puree. Add chicken to slow cooker and pour puree from food processor over chicken. Cut remaining 4.5 onions into thin slices and arrange over chicken. Place cover on slow cooker. Set temperature to slow cook (200 degrees on my unit) and time to 7 hours. When time on slow cooker is near its end, prepare a vegetable side dish to go with Chicken Vindaloo. When done, transfer food to plates and enjoy!

Notes: Many veggie side dishes go well with Chicken Vindaloo. I I like to roast veggies with spices and coconut oil in a covered cast iron skillet at 400 degrees for 30 minutes to prepare sides. Skillet roasted broccoli is pictured here under Slow Cooker Chicken Vindaloo.

My slow cooker is a Cuisinart Multi Cooker that I picked up at Williams-Sonoma because my local store had one in stock and I wanted to start cooking right away. Amazon sells the Cuisinart, but seems to be out of stock frequently. The Breville Stainless-Steel 7-Quart Slow Cooker with EasySear Insert on display in my Store is similar. Check them out by clicking on the Store link in the upper right hand corner of this site. The Cuisinart has a see-through top and the Breville has a stainless steel top. I like being able to see inside without opening the lid, but the Breville sells for $75 less than the Cuisinart.

Anupy Singla’s Chicken Vindaloo recipe in The Indian Slow Cooker inspired my recipe, but I made a fair number of changes, so don’t blame her if my version does not taste like the best Chicken Vindaloo you’ve ever had. Check out her book in my Store.
