Ground Chorizo Sausage with Beet and Radish Greens, Chopped Onion, and Radishes (Serves 1-2)

I take all the beet greens I can get from my local farmer. Most of his customers don’t care for them, but I like them a lot. I also like radish greens. Fresh radish greens are prickly and not everyone will eat them, but I find they cook down nicely and lose all their prickliness. I mixed beet and radish greens recently because I did not have enough of either one to make a meal and it turns out they go nicely together. I had a few radishes too and cooked them with chopped onion to increase the volume of veggies in my meal. I happened to have ground chorizo sausage, but you could make this meal with regular ground pork, beef, or lamb. I consider this one of my “signature” meals. If I were teaching a class for new Paleo cooks, this meal would definitely be on the syllabus.

Prep and Cook Time: 15 to 20 minutes

Ingredients:

Coconut oil
1 sweet yellow onion
2 or 3 radishes
1 pound of chorizo sausage
1 bunch of beet greens
1 bunch of radish greens
Salt
Garlic powder
Apple cider vinegar

Directions:

Melt 1 tablespoon of coconut oil over medium heat in a wok or large skillet. Peel and chop onion into bite-sized pieces and add a big handful to the hot oil. Save the rest of the onion in an air-tight container in the refrigerator. Clean radishes, chop into bite-size pieces, and add to hot oil. Season onions and radishes with a dusting of salt and garlic powder. Add 1/3 to 1/2 pound of chorizo sausage pieces to hot veggies and mix the sausage and veggies together. Rinse the beet and radish greens and tear or cut them into bite-size pieces. When the sausage is nearly browned, but still showing some pink, add the greens to the wok and dust with salt and garlic powder. Splash apple cider vinegar over the greens, cover the wok, and let everything cook for about 6 minutes. After 6 minutes, turn off heat, stir everything together, and taste to make sure seasonings are right. Add more salt or garlic powder if needed. When done, transfer to a plate and enjoy!

Note: You can make this meal with any fresh greens – kale, chard, spinach, beet greens, radish greens, turnip greens, etc. And you can make it with any ground meat. You can even make with any kind of onion – yellow, white, or red. Use any ingredients you have or like, just make it.

  1. I didn’t know radishes had greens! Guess I need a book titled what NOT to eat from the garden. lol
    This recipe sounds great, thanks for sharing. I’ve always had issue with ground meat…a texture thing I think. But
    having the veggies inside as opposed to along side might help.
